Just 30 years ago, "milk" was mostly a choice between whole and low-fat. 🥛
Today is World Milk Day – a good day to look at milk beverages as one of the most diverse corners of the beverage and liquid food industry. Drinking yoghurt, flavoured milk, kefir and a growing list of other formats have already reshaped how consumers buy and drink dairy. For example, the drinking yoghurt market grew to about 47 billion USD in 2024.
🌱 And the diversity doesn't end with the cow: plant-based options like soy and oat drinks increasingly look less like a competition to dairy and more like a parallel market growing right beside it.
The next chapter is already taking shape, with new technologies in development:
👉 AI-driven fermentation: Using artificial intelligence to monitor and fine-tune the fermentation process in real time, for more consistent quality and less waste.
👉 Precision fermentation: Using microorganisms such as yeast to produce real milk proteins without a cow, enabling animal-free, lactose-free dairy.
