🔥 THIS is why I love cooking over fire! 🔥

A big, juicy pork tomahawk, a ridiculously good creamy mustard sauce, crispy Parmentier potatoes and deep-fried sage leaves. 🤤

Simple ingredients, proper cooking and an absolutely banging plate of food!

The pork was cooked over live fire on the Arcadian, fuelled by Briquettes, getting that beautiful colour and flavour you just can’t replicate in a pan.

And that mustard sauce? Honestly, I’d happily drink the stuff. 😂

Massive shout-out to for the inspiration behind this one. Saw the dish, knew I had to give it a go, and put my own live-fire spin on it!

One thing I always try to show here at Millington Hall Farm is that BBQ doesn’t have to mean brisket, burgers and ribs. There’s a whole world of incredible food you can cook over fire, and dishes like this are exactly why I love what we do.

🔥 So, here’s a question for you…

Are you going for the classic pork chop and apple sauce, or are you joining me on team creamy mustard sauce? 👀👇

💾 Save this one for your next BBQ cook.
👊 Tag someone who’d absolutely demolish this plate!

For the person who’s impossible to buy for.

They’ve already got the gadgets. The kitchen is full. And you’ve bought them enough socks to last a lifetime.

Things I’ve learned running a BBQ school — #2 🔥

Stop obsessing over hitting a “perfect temperature.” Real BBQ doesn’t work in absolutes.

10 degrees too hot? 10 degrees too cool? A little fluctuation? It’s all fine. If you’re chasing the exact number, you’ll miss the whole joy of the cook.

BBQ is about feel, smell, look, and a bit of patience. Don’t let the thermometer rob you of the fun.

Just relax and trust that a good BBQ happens in that range.

How do you approach it? Let me know! 👇

Things I’ve learned running a BBQ school — Part 1

Use a meat probe. Absolutely.

But don’t let the probe do all the thinking for you.

Temperature is information, not the whole answer. Learn what the meat feels like. Look at the bark. Notice how the fat is rendering. Feel the resistance when the probe goes in. Pay attention to what’s actually happening on the grill.

The more you cook, the more those little signs start to make sense — and that’s when you stop simply following numbers and start becoming a better cook.

I still use a probe all the time. It’s a tool, not a replacement for judgement.

That’s one of the biggest things I’ve learned from running a BBQ school: use the technology, but learn the craft.

What’s one BBQ lesson you had to learn the hard way? 👇

🔥 The final Wild Grill of the season.

Today we fire up the tipis for one last time this year, and if I’m honest… it’s a bit of a sad one. 😢

The Wild Grill has become such a huge part of what we do here at Millington, bringing great food, fire, drinks and good people together for a proper few hours in the great outdoors.

But there’s plenty to look forward to…

Next year, the Wild Grill gets its own custom-built home here at the farm. 🔥

Same fire, same food, same atmosphere… but a space designed specifically for the experience.

If you’ve never joined us, now’s the time to get your date in the diary.

🎟️ Next year’s Wild Grill dates are already live and tickets are selling.

Head to www.Millingtonhall.com and come and join us around the fire.

As summer ends and autumn creeps in, the evenings get darker, the layers start to come out and there’s something pretty special about gathering around the fire.

Our Meadow events finish next week, but there’s still plenty happening at Millington Hall Farm through the autumn and into winter.

Think great food, warming drinks, live fire, good music and like-minded people, all in the Cheshire countryside.

Keep an eye out for our upcoming social events and have a look at the website for our winter-themed BBQ classes, cookery classes and experiences.

Come and spend a few hours with us. You won’t regret it.

It’s not all smoke and fire at Wild Grill. 🔥

One of the things we love about the experience is celebrating some of the incredible produce and makers we have on our doorstep.

For our charcuterie, we use North by Sud Ouest, a Liverpool-based maker with an incredible passion for what they do and a serious amount of knowledge behind it.

Their charcuterie is exceptional, and it’s a real pleasure to be able to showcase their creations as part of the Wild Grill experience.

Because for us, it’s not just about cooking over fire. It’s about great food, great producers and sharing the stories behind what we eat.

And this is definitely one of those. ❤️
