Traditional Food Photography Workshop, Vietnam, September 15–21, 2025

Within the framework of the project “Improving the Quality of the Vietnamese Food Composition Database (AFCD+)” funded by the Government of the Republic of Korea through the Rural Development Administration (RDA), the Asian Food and Agriculture Cooperation Initiative (AFACI) and its member countries have been implementing a number of key activities to improve food data quality and foster international research collaboration.

From September 15–21, 2025, the Center for Agrarian Systems Research and Development (CASRAD) under the Field Crops Research Institute (FCRI), Vietnam Academy of Agricultural Sciences (VAAS), organized the “Traditional Food Photography Workshop”, with the participation of 12 delegates representing four countries: Mongolia, Cambodia, Kyrgyzstan, and Vietnam. The activity was also guided and supervised by two project coordinators from the AFACI Secretariat.

During the activity, 40 traditional dishes from the participating countries were prepared by local chefs, with the entire process—from preparation and cooking to the final product—carefully documented. Highlighted dishes included Amok steamed fish and fresh Khmer noodles (Cambodia); Beshbarmak, Plov, and Samsa pastry (Kyrgyzstan); Khorkhog with offal and traditional dumplings (Mongolia); as well as pho bo (beef noodle soup), bun cha, bun bo Hue, and banh chung (Vietnam). These dishes not only showcased unique flavors but also reflected the rich culinary heritage of each nation. The images collected will serve as valuable resources for developing the AFCD+ handbook and enriching the regional food composition database, while also promoting the cultural and culinary diversity of the participating countries.

On the first day of the event, CASRAD was honored to welcome Assoc. Prof. Dr. Tran Minh Tien – Vice President of VAAS; Dr. Bui Quang Dang – Head of the Department of Science and International Cooperation, VAAS, and national focal point of AFACI in Vietnam; Dr. Le Hong Dung – National Institute of Nutrition; and Dr. Trinh Van Tuan – Director of CASRAD, together with project staff.

The activity received high recognition from AFACI. In a thank-you letter to CASRAD, Dr. Park Soo-Yun – Director of the AFACI Secretariat – emphasized the professionalism, dedication, and effectiveness of the organization, from venue preparation and technical support to program coordination. The AFACI Secretariat particularly appreciated the technical assistance in photography, which ensured the creation of high-quality documentation with long-term significance in preserving and disseminating traditional culinary values.

This event was not only an opportunity for countries to share their culinary treasures, but also an important milestone reaffirming the strong commitment to cooperation among Vietnam, Korea, and other AFACI member countries in the fields of agriculture, nutrition, and sustainable food system development.
