🌞 One of the best perks of running Lydia’s Food Truck? We get to taste everything before it goes out to you, making sure it’s just as delicious as we’d want it ourselves!

Today, it was all about our Huevos Rancheros: two sunny-side-up (or scrambled) eggs perched on warm corn tortillas, covered in our zesty, homemade ranchero sauce made with fresh tomatoes, onions, and herbs, and topped with crumbled queso fresco. Served alongside creamy refried beans and a fresh salad, it’s a dish we’re proud to share with you!
