This morning, a wonderful team from Cornell Cooperative Extension began deconstruction of the 2026 Butter Sculpture little by little, ensuring to scrape every ounce. 🧈✨

So, where does all that butter go? Noblehurst Farms, a farm family of Craig’s Creamery, recycles the butter and turns it into renewable energy (for their 11th consecutive year!). As always, farmers know how to let nothing go to waste.

We can’t wait to unveil the next Butter Sculpture in 2027! We hope you enjoyed this little sneak peek of the entire process!

The Fair may have ended, but the fairgrounds are very much still alive! Our incredible staff and vendors are currently working hard to break down, pack up, and clean the grounds to prepare for next year’s fair.

As the 2026 Fair season comes to a close, we want to take a moment to thank all of our attendees, vendors, staff, and everyone who makes The New York State Fair possible. 🎡✨

Each year we look forward to opening those gates, seeing all the smiling faces, and helping ensure all of the fun and excitement never stops. It’s really more than just a fair – it's about community, culture, and bringing the entire state (and nearby friends!) together to celebrate New York and each other!
