Here is our menu! It looks amazing and delicious!
FRIDAY
Dinner: Taco Lasagna
*Layers of tortillas, beef or tempeh cooked in enchilada sauce, grilled veggies, beans, and cheese, baked golden brown in the oven. Side of shredded lettuce, sour cream, and green salad
Dessert: Cookies
SATURDAY
Breakfast: Apple Oatmeal Bread
*Scrambled eggs or tofu, pork/veggie sausage, yogurt, fruit, granola and toppings
Lunch: Buddha Bowls
*Brown rice or quinoa, chicken or tofu, veggie toppings, your choice of sauce, green salad
Dinner: Creamy Lentil Bake
*Oven baked layers of lentils with a creamy cashew sauce, roasted veggies, and side salad
Dessert: Fruit Crisp
SUNDAY
Breakfast: Frittata
*Roasted potatoes, scrambled egg or tofu, ham or veggie, and cheese, baked in the oven. Oatmeal, fruit, yogurt, granola and toppings
Lunch: Creamy Butternut Squash Pasta
*Cashews, squash, herbs and spices blend to make a delicious, vegan sauce. Served with pasta, roasted veggies, and side salad.
Dinner: Chana Masala
*Classic Indian curry dish with tomato and chick peas. Served with heirloom basmati rice, chicken or tofu, roasted veggies, and side salad
Dessert: White Cake with Chocolate Whipped Cream and Berries
MONDAY
Breakfast: Lemon Poppy Seed Cake
*Scrambled eggs or tofu, pork/tempeh bacon, oatmeal, fruit, yogurt and toppings
Lunch: Sandwich and Salad Bar
*Homemade focaccia bread, cold cuts or tempeh, hummus and toppings. Served with kale ceasar salad and fruit
