"After a packed spring and summer of BBQ action, the season closes on a high note. Pig Island NYC celebrates its 17th year on Saturday, September 12 at Snug Harbor Cultural Center on Staten Island.
**Many don’t realize this is one of the most beautiful outdoor venues in all of NYC.**
"More than 20 chefs and restaurants, each partnered with heritage farms and local producers, serve everything from whole hog roasts and pork belly to aged country ham and creative nose-to-tail preparations. A panel of expert judges awards top honors throughout the afternoon, while Hot Sauce Alley, craft beer, hard cider, wine, and spirits round out the experience.

"The 2026 roster is still to be announced, but past participants give you a sense of the talent level: Tank Jackson of Holy City Hogs, Rodrigo Duarte of Don Rodrigo, Kam Rai Thai, Brothers BBQ, and more. VIP tickets ($85 + fee) include 11 a.m. early entry and an exclusive Pig Island NYC T-shirt. General Admission ($65 + fee) opens at noon. Group tables for 10 are available at $750. It’s a 21+ outdoor event, rain or shine — and the best way to send off another great year of NYC barbecue."

Here's his full culinary report from the Basque region of France:

"
As in Bayonne, France in the Pays Basque.

"
I'm loving a lot of ham and cooking lots of Basque dishes. I've made
Basque guinea fowl, tuna stew, and minced veal stew.

"I'm cooking tomorrow using pig tongue confit! Last Saturday we were in San Sebastien, Spain, aka Donestia, about an hour over the border, and I joined our host David in cooking lunch in his typical Basque men's private cooking club, a Txoko, where women can look but not cook, only eat. We made chorizo pinxos and chipirones to start before sautéed  merluz, hake, followed by Basque cheesecake."
