Avocado Fudge Cookies | Flourless, Low Carb!

Ingredients:

▢100 grams ripe avocado
▢1 large egg
▢1/2 cup unsweetened cocoa powder
▢1/4 cup unsweetened shredded coconut
▢1/4 cup Low Carb Sugar Substitute
▢1/2 tsp baking powder
▢3/8 tsp liquid stevia
▢1/4 tsp Pink Himalayan Salt

Instructions:
Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.
Dice the avocado in the peel and add to a large mixing bowl. Mash using a fork as much as possible.
Add the egg, erythritol, stevia, and salt and combine using a hand mixer until uniform in consistency.

Add the cocoa, coconut flakes and baking powder and combine once more.
Using a cookie scooper, scoop out 9 cookies onto the baking sheet. Using a spoon or your finger, spread the cookies out to your desired size preference.
Optionally, top with lilys chocolate chips or shaved bakers chocolate. Bake for 10-12 minutes, until firm.
Allow to cool for five minutes prior to handling.
Best stored in a zip top bag in the fridge up to one week. Enjoy!

Easy Avocado Cookies (With Chocolate Chips)

INGREDIENTS

1 Egg Large, Room temperature
1 Avocado Ripe, Peeled and pitted
1 teaspoon Vanilla extract
¾ cup Granulated sugar
½ cup Whole wheat flour
½ cup All-purpose flour
1 teaspoon Baking soda
½ cup Semisweet chocolate chips Or chocolate chunks

INSTRUCTIONS

In a mixing bowl, beat the egg until fluffy.
Add avocado and vanilla extract and mix again.
Mix in the sugar.
Add the whole wheat flour, all-purpose flour, baking soda and mix until smooth.
Stir in chocolate chips.
Use an ice cream scooper to scoop out dough onto a cookie tray, lined with parchment paper.
Chill the tray for 10 minutes.
Then, bake at 350 degrees F for for about 15 minutes or util the edges are firm and golden brown.
Allow them to cool and then enjoy.

NOTES
You can reduce the sugar to ½ cup, if you prefer cookies that are not too sweet.
Leftovers can be stored in a cookie jar at room temperature for up to 3 days.
Try using other flavors of chocolate chips.
Don't over-bake cookies because that would make them dry.
All ingredients should be at room temperature to allow even mixing.
You must use a soft and ripe avocado.

Ingredients
1 cup butter or margarine, room temperature
2 cups sugar, granulated
4 eggs
4 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
6 bananas, very ripe and mashed (preferably overripe)
2 cups fresh strawberries, sliced into quarters and tossed in 2 tablespoons flour

Instructions
Preheat oven to 350 degrees F. Grease two (2) 9x5-inch loaf pans.

In a large bowl, cream butter or margarine and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Sift in flour, baking powder, baking soda, and salt; stir until dry ingredients are moistened. Fold in bananas.
