POP-TAIL came to fruition when two freelance mixologists Laurenne Mills and her sig-O noticed a void in the marketplace. During art shows and popup weekend events, they observed there were alway
s plenty of beer and wine choices, but no good classic cocktails. We’re talkin’ about a nice Old Fashioned, Mule, or Julep, with a proper garnish atop. On one brisk summer night in 2015, just for fun, the pair decided to try their hand hosting a popup cocktail bar in a gallery at Artwalk, in Downtown Santa Ana. With a Square Reader, cooler, some badass bar tools, a single foldable table and some liquid courage, POP-TAIL was ready to go! The menu offered six craft cocktails, for five dollars each, because knowing the target market – they got five on it. POP-TAIL did their thing that night, and actually turned out a pretty little profit. From there Laurenne explored the idea of making a real start-up business out of POP-TAIL.
