CHEF SPOTLIGHT: Sarah Roland | Bayou Sarah Farms

2024 BEST OF THE FEST WINNER🥇

Bayou Sarah Farms is Louisiana’s first (and only) water buffalo dairy! Sarah Roland started the farm in 2019 raising meat chickens, and has since grown it into a regenerative farm with water buffalo for meat and dairy, chickens, pigs, honey bees, and an organic fruit orchard. Bayou Sarah farms supplies the community with fresh ingredients from the farm, hosts farm to table dinners, and hosts educational tours and classes.

CHEF SPOTLIGHT: Nick Kent | Big River Pizza and Restaurant 1796 🍕

Chef Nick Kent’s passion for the culinary arts began early in his family’s St. Francisville restaurant, where he honed his skills and went on to win culinary competitions across Louisiana. Fast forward to today, and he has established himself as an up-and-coming talent in the regional culinary scene. After starting at Restaurant 1796 six years ago and working his way up to Executive Chef, Nick is now stepping into the role of Executive Chef at Blue House Hospitality’s newest venture, Big River Pizza Co., which opened in 2024.
