What is Pueblo Chile? 🌶️

Pueblo Chile is more than a famous pepper, it’s a symbol of Pueblo’s history, culture, and agricultural heritage. Grown in the rich Arkansas River Valley soil and nurtured by generations of local farmers, Pueblo Chile has become one of Southern Colorado’s most celebrated crops. Its bold flavor, thick flesh, and signature heat set it apart, making it a favorite in kitchens across Colorado and beyond.

As one of the most well-known varieties, the Mirasol chile, named from the Spanish words meaning “looking at the sun,” because the pods grow upright toward the sky.

For decades, farming families in Pueblo County have passed down the knowledge, hard work, and pride that make each harvest possible.

Pueblo Chile tells the story of resilience, tradition, and the people who helped shape Pueblo through agriculture. It’s not just grown here, it belongs here.

32 Years of Tradition... Rooted in Pueblo 🌶️

The Pueblo Chile & Frijoles Festival began with a simple but powerful idea, bring people together to celebrate the farmers, the harvest, and the crop that put Pueblo on the map.

In the early 1990s, local chile growers, alongside The Greater Pueblo Chamber of Commerce leader Rod Slyhoff, banded together to create a festival that would showcase Pueblo’s agricultural heritage and give farmers a direct way to connect with the community. What started as a grassroots effort quickly grew, fueled by pride, hard work, and a shared belief in telling Pueblo’s story through its most iconic crop.

From those early days of roasting drums and local booths to the packed streets we see today, the heart of the festival hasn’t changed, it’s still about honoring the people behind the chile.

32 years later, that same spirit lives on in every roast, every plate, and every family tradition made here in Pueblo. ❤️
