This week's SPoTLighT is a couple of days early.

Fox & Fern Outdoor Cafe is open Fridays, Saturdays, Sundays and Mondays from 11 a.m. to 4 p.m. This way you do not have to wait 4 days after the spotlight to find them open!!

Tucker Olson is from Jasper and his wife, Lindsay is from Tulsa. She used to make the ready to cook meals, which I heard rave reviews, but never got to taste them. Luckily for all of us, she is now putting her skills into the food truck. That's right, the 'outdoor cafe' is actually a food truck, serving amazing food. They have outdoor seating, both covered and not. Tucker was a rehab specialist, but agreed to help run the food truck, so they could be open more days! They are both a delight.

Each day they are open, they offer their signature Oatmeal Cream Pies, as well as another special dessert. In order to treat yourself, you must be early, because they ALWAYS sell out quickly.

Every day they have wonderful salads, cold sandwiches, and hot sandwiches and wraps. They bake their own artisan and hearty farm breads, used to make many of the sandwiches. I can recommend this place without hesitation.....so good! And the homemade potato chips come with every sandwich!

Ask for a loyalty card. Every 10th sandwich is free!
