Mike Greenhill, a native of the Jackson metro area, has spent 25 year building his career in the restaurant industry. His culinary journey has taken him across the country, working in cities such as Charlotte, Dallas, and Denver, as well as along the West Coast with Thai Chef Weerayut Oudi Uted. Former Executive Chef at Walkers Drive for over a decade, and partners with Derek and Jennifer Emerson to help guide in other local restaurants. Now with opening Josett, Mike is returning to Fondren to create a restaurant that his experience, his roots, and passion for thoughtful hospitality.

After graduating from a Hattiesburg-area high school in 1994, Jeremy Noffke went to Tampa, Florida, to pursue his passion for skateboarding. While there, he began working in restaurants. By his early twenties, he was back in Hattiesburg, where he got a job busing tables at St. John’s Crescent City Grill.
Noffke worked for St. John for two decades. Along the way, he attended the Culinary Institute of America, where the erstwhile skater kid learned the methods of the world’s finest cooks. In 2009, back in Hattiesburg, he became chef de cuisine at Purple Parrot Cafe, a position he held for eight years.
In 2017, Noffke moved to the Gulf Coast, where he helped open a restaurant and then worked as a corporate chef.
So, in 2022, when Southern Prohibition (SoPro), a brewery in downtown Hattiesburg, asked Noffke to help build a food menu, he jumped at the chance. He designed the kitchen from scratch and still to this day serves as the brewery’s taproom chef.
During his time there, he worked with Emily Curry, CEO of SoPro at the time, and his longtime friend Dusty Frierson who was consulting on the beverage program for SoPro. The three enjoyed working together so much, Big Trouble was born. With fare that skews heavily toward Chinese American cuisine, but there are other influences, too, and trying to define the food would be a fool’s errand.
