Warm up your Big Green Egg for this Moink Ball Recipe!
INGREDIENTS
500 g minced beef
2 sprigs of parsley
1 sprig of oregano
1 sprig of basil
3-4 full tbsp grated Parmesan cheese
8 long slices of streaky bacon
barbecue sauce of your choice
PREPARATION IN ADVANCE
Ignite the charcoal in the Big Green Egg and heat to 150°C. Meanwhile, put the minced meat in a bowl. Remove the leaves from the herbs and finely chop them.
Add the herbs and 2 tablespoons of the Parmesan cheese to the minced meat, season to taste and knead well.
Halve the bacon slices. Divide the mince into portions of around 35 gr and roll into balls. Wrap each ball in half a slice of bacon and secure with a cocktail stick.
PREPARATION
Scatter a handful of Cherry Wood Chips over the glowing charcoal. Place the convEGGtor in the EGG, put the Disposable Drip Pan on top and put the Cast Iron Grid in the EGG. Place the moink balls on the grid and close the lid of the EGG. Bring the temperature of the EGG back up to 150°C and leave the moink balls to smoke and cook for about 30-35 minutes, turning them after about 15-20 minutes.
The moink balls are cooked when they have reached a core temperature of 63-64°C. You can measure the core temperature with a probe thermometer. Remove them from the EGG and place them in the Rectangular Drip Pan. Brush the moink balls with your favourite barbecue sauce.
Put the Drip Pan on the grid and close the lid of the EGG. Heat the moink balls for 3-4 minutes so that the sauce caramelises a bit.
Remove the moink balls from the EGG. Remove the cocktail sticks, put the balls on an attractive serving plate and sprinkle with the rest of the Parmesan cheese. Use the Corn Holders as forks for a smart presentation.

Vegetables don't have to be boring! This is a Smoked Cauliflower on the one and only Big Green Egg!
Here's the recipe!
Ingredients
1 head cauliflower
2 tbsp olive oil
2 tbsp DizzyPig Dizzy Dust
Juice from ½ a lemon
2 garlic cloves minced
1 tbsp tomato paste
Instructions
Mix all of the ingredients together in a bowl. Rub the mix over the cauliflower.
Oil cast iron skillet with olive oil or non stick spray.
Grill at a low heat of 300 degrees for about 2 hours.

Cedar Wood Smoked Salmon on the BGE!
INGREDIENTS
(FOR THE SALMON)
2 salmon fillets, skin on, 300 g each
1 fennel
20 g tarragon
8 brioche rolls
(FOR THE SALT BRINE)
25 g salt
2 strips of orange peel
10 peppercorns
2 sprigs of thyme
PREPARATION IN ADVANCE
Dissolve the salt in a half litre of lukewarm water to prepare the salt brine and add the strips of orange peel, peppercorns and thyme. Pour the salt brine in a square or rectangular dish (to which you will add the salmon fillets at a later stage) and leave to cool.
Add the salmon fillets to the dish containing the salt brine, place it in the refrigerator and leave to soak for 2 hours. Also soak the Wooden Grilling Planks for 2 hours in a container of water.
PREPARATION
Ignite the charcoal in the Big Green Egg and heat, with the convEGGtor and the Stainless Steel Grid, to 150°C. Cut the fennel into very thin slices using either a mandolin or food processor. Finely chop the tarragon and mix with the fennel. Remove the salmon from the salt brine and take the Wooden Grilling Planks out of the water. Pat the salmon fillets dry using paper towels and place each on a plank, skin-side down.
Spread the fennel mixture over the salmon fillets and place the planks on the grid. Close the lid of the EGG and allow the fillets to cook for around 20 minutes until done. It’s fine if the salmon looks slightly translucent at this stage.
Remove the planks with the salmon from the grid. Place the Half Moon Plancha Griddle on the grid and close the lid of the EGG allowing it to heat up. Halve the brioche rolls and grill for several minutes on the cut side.
Place the planks with the salmon fillets on a serving board and serve with the grilled brioche rolls..
