Multi-year Winner of the Cynthiana Honey Festival Honey Show Ecklar Farms shares their banana bread recipe! Yum! 🍯🍞

I am frequently asked whether I utilize our honey as a cooking ingredient, and the response is affirmative. When substituting honey for sugar, a general guideline is to use 3/4 cup for every 1 cup sugar. It may be necessary to adjust other liquid ingredients to prevent the recipe from becoming overly runny. As a liquid sweetener, honey is sweeter than sugar, requiring less quantity to maintain the same level of sweetness. Here is a simple and delectable recipe for Banana Bread.

3 very ripe bananas
1/2 c butter softened
3/4 c Ecklar Farms Honey🍯
2 large eggs, lightly beaten
1 1/2 c All Purpose Flour
1 tsp Baking Soda
1 tsp Salt
1/2 tsp Vanilla
You may add chopped walnuts o raisins if you’d like. My family does not like them but can make a great addition to the recipe.

Cream butter and honey together until smooth. Mash bananas until chunky and smooth. Add bananas to honey mixture along with eggs and mix until well blended. Whisk together flour, baking soda, and salt. Add to batter slowly incorporating until smooth batter. Add vanilla and any nuts or raisins mixing until well blended.

Pour into a greased and lightly floured 9x5 baking loaf pan. Batter can be equally divided into two loaf pans for smaller loaves or for a thicker loaf just one pan. Bake at 350 degrees. If using two pans bake for 30-40 minutes. One pan will bake for 55-60 minutes. Bread is done when a toothpick inserted in the center comes out clean.

I like to enjoy with a cup of hot tea sweetened with honey. And it smells soooo yummy baking. Hope you enjoy!

We’ve taken some time to rest and reflect after the 2025 Cynthiana Honey Festival. Now, we need to express our gratitude for all of the amazing help and support we have received this year and since we began in 2022.

There are so many people that contributed to the 2025 Cynthiana Honey Festival and if I could name them all, I would! Y’all know who you are. You, our community, have made this festival what it has become these past four years, and we are so grateful that you’ll be with us to help grow it for years to come.
