We can’t cook today because the kettle is making horrible noises while heating up, so that’s fun! Called the techs at Cleveland and they were not exactly helpful in diagnosing, saying it might be a loose connection (it’s not). Luckily this thing has no moving parts or fancy bells & whistles, so fingers crossed I can track down the issue myself and get us up and running again ASAP 😮‍💨

We asked Jeffrey to keep track of the tomatillos on the grill, but he just kept diligently packing orders and lost track of time. This is the result of his laser focus. We will never financially recover from this and he has promoted to customer.

We’re thrilled to announce that today is Jeffrey's first full-time week here at Harmacy! He's been working with us for just about a year now part time, and he's always blown us away with his quickness, efficiency, and wonderful energy. With an interest in logistics, he's a perfect fit for order packing, keeping stock, and most importantly helping us keep everything organized and working smoothly. We're so happy to have him on as a bigger part of the team.

Whether it's orders that need packing, jars that need labeling, or even just a well-timed joke to lift the mood, Jeffrey’s got our backs. Now, every time you open a perfectly packaged order from us, you'll know he's got your back too.

You've seen our newest crew member making an appearance, but do you know the full story?

The jacketed steam kettle has a history that goes back to 3500 BC, helped make pasteurization possible, and fed U.S. sailors during World War II. And somehow, one made in 1999 for a South Carolina school kitchen ended up in our Cookeville shop.

We wrote up the whole story, where it came from, how we found it, and what it means for the future of Harmacy. It's a good one, check it out below!

Do you love pickles? Gherkin Around is here to bring the power of pickles to the world of hot sauce.

We built this one from the ground up with cucumbers, jalapeños, a touch of habanero, fresh dill, two vinegars, and a twelve-spice pickling blend we toast and grind in house. Every element is there for a reason, because if the spices aren't right, it just doesn't taste like a pickle.

The result is a 3/10 heat sauce that's tangy, garlicky, and hits that cheek-tingling zip you expect from a perfect pickle, with a slow, savory heat behind it.

The first test batch in the new kettle went off without a hitch! It heats up so much faster and keeps temp so much better than our brew pots on top of induction burners, what a powerful upgrade this is 😮‍💨

There’s plenty of testing to do yet as we scale up each recipe. Each sauce needs to be cooked in the kettle at its ‘normal’ size so we can see how it behaves before we increase the batch size little by little and walk it up to full capacity. In a few weeks time, we should be operating at a whole new capacity!

She's back! We put Chi-Chee on pause for a little while to make room for some exciting new developments, but we're back to our regularly scheduled programming and it's in stock and ready to order 😄

For those unfamiliar, Chi-Chee is our kimchi hot sauce, and I don't just mean kimchi-flavored! We make our own kimchi in-house and ferment it for three weeks for that tangy, funky, bright flavor any good kimchi ought to have.
