In our final Cooking demonstration of CincItalia 2026, CincItalia Festival Chairman Joe Mastruserio (accompanied by his lovely assistant and daughter Emma Mastruserio) talked about the four classic Roman pastas and prepared Pasta Alla Zozzona. You can find a recipe for it below. Tutti a mangiare! (Everybody eat!)

Rigatoni alla zozzona is the decadent pasta mash-up of Roman amatriciana and carbonara, with a sausage twist.
