Laurie Maddalena is a leadership consultant who's built her business over 17 years while raising three children. She's passionate about helping leaders create sustainable lives where work doesn't come at the expense of everything else.

Tonight’s cocktail celebrates two of the first harvests of the season: rhubarb and mint

Rhubarb Cooler
1.5 oz white rum 5 oz Aperol5 oz fresh lime juice 5 oz fresh lemon juice
10 fresh mint leaves plus a sprig for garnish
1 oz rhubarb simple syrup
Club soda

Combine ingredients in a cocktail shaker without garnish or club soda. Shake and strain into a rocks glass over fresh ice. Finish with club soda and add a mint sprig.

To make the simple syrup:
1/2 cup sugar
3.5 oz finely chopped rhubarb
2 lengths of lemon zest
1 cup water
Bring to a boil stirring until sugar dissolves. Remove from heat and cool to room temperature. Strain out solids and add to a jar or decanter. Store in refrigerator for up to 4 weeks.
