The Potato Caboose is owned by Elizabeth, Jacob, and their daughter Emeline. Bringing together our love of music and food and our history of festival vending and restaurant cooking, we spent our pandemic shut-down time listening to music, naming potatoes, and creating a menu. We built our trailer over a winter season, and our artist friend John Gatto created our logo and painted the exterior artwork - honoring the music and art we love.

After multiple 10+ hour days for three shows in a row, the crew drove home through the mountains of VT after and stopped to take in the view The crew is the best!
