During the Livestock Malaysia 2025, Matthew Clark's presentation โMaximising Starch Utilization in Broiler Feedsโ highlighted that pelleting can create resistant starch, which is less digestible and provides only 2,500 kcal/kg compared to 4,000 kcal/kg from gelatinized starch. Gelatinized starch breaks down into glucose, which fuels glycolysis, producing pyruvate needed for energy (ATP) and amino acid synthesis. When glucose is low, fat is used as energy instead. Well-processed starch ensures enough pyruvate for efficient protein synthesis, boosting growth, muscle development, meat quality, yield, and reducing drip loss.
To fully gelatinize starch, moisture must pe*****te deep inside the starch granules. While food processing requires around 35% moisture for this, feed production is limited to 16-18% moisture to prevent roller slippage and pellet die blockages.
