**We observed the Roast in the high altitude**
Due to lower air pressure and moisture at higher altitudes,the beans lose water more quickly,creating steam and cracking at a lower temperature.This meticulous process, demonstrated by Eduardo,results in his coffee with exceptional flavor clarity and structure.
