Mushroom Barley Soup
🍲🌾 Earthy, hearty, and soul-warming—Mushroom Barley Soup is the ultimate comfort dish. Packed with wholesome barley and savory mushrooms, it's a perfect meal for a chilly evening! 🍄🥄💚
Ingredients:
1 tbsp olive oil
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
4 cloves garlic, minced
1 lb mushrooms (button, cremini, or a mix), sliced
1 cup pearl barley
4 cups vegetable broth (or chicken broth)
1 tsp dried thyme
1 bay leaf
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, sautéing until softened (about 5 minutes).

Add garlic and mushrooms, cooking until the mushrooms release their moisture and become tender, about 7 minutes.

Stir in barley, broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer, covered, for 40-45 minutes, or until the barley is tender and the soup has thickened slightly.
