✨Meet Sam Gleeson✨

Born in Cambridge in 1977, Sam Gleeson is an artist and maker now based on the west coast of Ireland. Having lived and worked across the globe, his practice is shaped by a deep respect for traditional craftsmanship, natural materials, and sustainable processes.

Gleeson’s primary medium is the knife—an object that represents the intersection of utility, tradition, and beauty. Drawing inspiration from figures like David Nash, William Morris, and furniture maker Peter Korn, his work explores humanity’s relationship with natural resources, food culture, and the creative reuse of waste.

Using advanced forging, welding, and joinery techniques, Gleeson crafts knives that are both highly functional and sculpturally expressive. Each piece tells a story—of transformation, of heritage, and of connection to the material world.

His work has received multiple awards, including the prestigious RDS Crafts Award and is currently shortlisted for the inaugural Rabih Hage Bursary. Gleeson has also exhibited internationally including the Homo Faber biennale in Venice, Munich Jewellery Week and Rings in Water in Slovakia. He is currently exhibiting as part of a three-person show at the new Súil Gallery in Ennis.

Gleeson’s work is held in the permanent collection of the National Museum of Ireland, and he was previously commissioned by the National Gallery of Ireland to create a bespoke dining table.

He is an invited member of the Society of Designer Craftsmen, The Irish Artist Blacksmiths Associations Forged in Ireland team and the Design and Crafts Council of Ireland.

✨Meet Sally Barnes✨

Sally Barnes is the founder of Woodcock Smokery in West Cork and one of the world’s most respected voices on wild fish, traditional food preservation, and sustainable fishing.

She began smoke-curing fish in 1979 to preserve the wild Atlantic catch she and her then husband were landing off the West Cork coast, establishing Woodcock Smokery in 1981. A fisherwoman and former commercial fisherman’s wife, Sally taught herself traditional smoking techniques through hands-on trial and error. Today, she works exclusively with wild fish, producing small-batch, traditionally smoked fish prized by chefs for its purity, restraint, and integrity. Her cold-smoked Wild Atlantic Salmon earned Ireland’s first Supreme Champion Award at the Great Taste Awards in 2006.

Alongside the smokery, Sally operates The Keep, her fish-smoking school in West Cork, where she teaches traditional smoking, coastal foraging, and responsible sourcing to chefs, students, and food lovers.

Her contribution to Irish food has been widely recognised, including the Euro-Toques Ireland Craft Award (2018), the Irish Food Writers’ Guild Lifetime Achievement Award (2022), and Georgina Campbell’s Movers & Shakers Award (2024). In 2025, Sally was invited to speak at the United Nations in Geneva on gender equality and sustainability in global food systems. Her work has been featured in the New York Times, Financial Times, The Irish Times, BBC Travel, and Dan Saladino’s book 'Eating to Extinction'.

A lifelong Slow Fish advocate, she continues to travel internationally to speak and teach on wild fish and ocean stewardship and is currently writing her first book.

✨Meet Birgitta Hedin Curtin ✨

Founder and owner of the Burren Smokehouse, Birgitta is an artisan producer using 100% Irish Wild and Organic Salmon, Trout, Mackerel and Eel since 1989.
Birgitta grew up on a self-sufficient farm on the East Coast of Sweden learning how to preserve food. This was the inspiration for starting the Burren Smokehouse with her husband Peter in Lisdoonvarna, co Clare. She studied marine biology with focus on algae. She is the founder of Slow Food Clare and has been running the Burren Slow Food Festival in May since 2005.
She is an avid supporter of the Irish Food Movement at numerous festivals and networking events. Founder, member and director of Burren Ecotourism Network supporting sustainability for her company as well as the Burren Area. Birgitta supplies Michelin star restaurants, five-star Hotels, Irish gourmet restaurants, specialty food stores and supplies private customers worldwide.
Birgitta is joining us at this year's Festival with an Edible Seaweed workshop on Sunday at 3.30pm. Book your tickets through our ticketing page.
