~SWISS MERINGUE BUTTERCREAM~
Egg whites 240g (1200g)
Sugar 480g (2400g)
Butter 600g (3000g) (any good quality brand)
please don’t buy the cheaper ones
Vanilla flavor 1/2tbsp

~Method~
In your mixing bowl add sugar and egg whites.

Heat up water in a smaller sauce pan and sit your mixer bowl on the edge of your sauce pan (make sure your mixing bowl doesn’t touch your water)

Stir with your whisk gently and feel the texture.

Once sugar has melted and your egg white is free from sugar granules, connect to your mixer and whip on high speed till meringue is glossy or shiny, thick and very white.

Gradually add Butter. Mix well after each addition.

Add flavor and whisk for few more minutes.

Stir with spatula and your SMBC is ready to be used for frosting.
