Today marks the start of Pride Month.

For us, it's a moment that sits alongside something we think about every day, the people who make this business what it is.

Heathcote & Co is built on a team that comes from different backgrounds, has different experiences, and has different perspectives, all working together to deliver something we're really proud of.

Adam Reid has been cooking since he was 16. Trained at Paul Heathcote's School of Excellence, shaped by Michelin-starred kitchens, and now the patron of one of Manchester's finest dining rooms at Adam Reid at The French - his path has always led back to the North West.

His cooking is straightforward in the best possible way. The best ingredients, trusted suppliers, and a clear point of view. Modern British food with a Northern accent, done properly.

A well-chosen wine doesn't compete with the food; it completes it.

The right pairing can change everything about a dish. It brings out flavours you might not have noticed, softens edges, and adds depth. It's all about balance and making sure every element of the table works together.

Our team think through every detail of the dining experience, and that includes what's in the glass. The food we serve is seasonal and considered, and the wines we recommend are chosen with the same care.

As Spring starts to come to an end, we're looking back to the start of the season and the arrival of the pink champagne rhubarb.

Pink, tender, sweeter than you'd be expect, and a reminder of why cooking seasonally is such a large part of what we do. We poach it gently in blood orange juice and a light sugar syrup, just until it gives. Cut into batons, laid onto buttered sweet brioche, and finished with soft whipped vanilla cream. A simple dish that is packed with flavour.

Simple, seasonal, and exactly the dish to wrap up springtime with. We'll be moving into summer in the coming weeks - watch this space.

Some days remind you exactly why this industry matters & yesterday was one of them.

We had the privilege of attending the International Wine & Food Society’s Awards Lunch for Young Chef & Sommelier 2026, and walking away, we felt something that’s hard to put into words.

For the last 5 years, we’ve had the honour of sponsoring the IWFS for their Young Chef & Sommelier competition, and year after year we get to watch young people stand up and show the world what they’re made of. Their skill, their knowledge and the quiet confidence of someone who has put in the hours because they genuinely love what they do. Every year, without fail, we leave blown away.

The talent coming through in the UK right now is something special. These aren’t “just” students; they’re the chefs, restaurateurs, sommeliers and front-of-house teams that will shape how the rest of us experience food and hospitality for decades to come. At a time when the industry needs passion more than ever, it’s impossible not to feel moved by how much of it was in that room yesterday.

To everyone who won, Congratulations. You’ve earned it. To everyone who put themselves forward, thank you. That took courage, and it matters more than you know.

We’re honoured to play even the smallest part in your journey. Keep going. 🤍

Up next in our Heathcote & Friends series: Terry Laybourne.

Considered, seasonal and precise cooking with ingredients handled with care has always been at the forefront of Terry's cooking.

Terry opened 21 Queen Street on Newcastle's Quayside in 1988 with his wife and brother. A Michelin star followed within three years, and what grew from that single restaurant became the 21 Hospitality Group, a collection of restaurants, pubs, and cafes built with community in mind.

The accolades came too. A Michelin Star, an Egon Ronay Star, an MBE, and most recently the Freedom of the City of Newcastle, but if you spend any time around his food, you understand that the recognition is a byproduct, not the point.

We're proud to have Terry as part of the Friends of Heathcote & Co, and to be able to offer his cooking for your own Unreservedly Special event.
