The bell has been handed to Paris 🔔

But before we look ahead, we want to recognise what has taken place here this week. Worldchefs Congress 2026 at ICC Wales has been a gathering of the highest order - rich in ambition, conversation, and the extraordinary community it brought to Wales. 🏴󠁧󠁢󠁷󠁬󠁳󠁿

And what a way to close: a live performance from mezzo-soprano Katherine Jenkins, sending every delegate on their way in style.

Day 3 of Worldchefs Congress brought together inspiring talks and dynamic competition action for another memorable day… ✨

Colin Wheeler-James inspired us with Capturing the Essence of Wild Food through Preservation, a true celebration of nature on the plate. 🌿

Big conversations took centre stage with Feed the Planet: Driving Global Impact and Menus of the Future sparking ideas on how chefs can shape a more sustainable world. ♻️

A powerful and important reminder from Kris Hall, Founder & CEO of The Burnt Chef Project, that burnout isn’t a badge of honour putting wellbeing firmly on the agenda. 🧠

Meanwhile, the energy in the Competition Hall was unmatched, with the Global Chefs Challenge and Global Vegan Chefs Challenge showcasing exceptional talent, creativity, and skill from across the globe. 🌎

In 2017, Chef German Lam, award-winning chef, healthy eating coach, and founder of Glam Foods LLC was diagnosed with nasopharyngeal cancer. What began as a tumour behind his nose progressed to affect his entire body, including his ability to taste and enjoy food.

For a chef, that is a particular kind of loss. And yet, through his own Freestyle Cooking philosophy and Five Component Freestyle Lifestyle approach, he found not just a path through treatment, but through recovery too.

This morning, German Lam brought that story to the Congress stage at ICC Wales. Honest, practical, and a deeply human a reminder that what we do in the kitchen is inseparable from how we live. ❤️

His session, "The Dragon Turns to Water," covered empathy, body, mind, professional respect, and the kind of resilience the industry rarely talks about openly enough. 🙌

Chefs, culinary leaders, and innovators from across the globe are arriving in Newport for the start of Worldchefs Congress 2026 - one of the most significant gatherings in the international food community 👩‍🍳

Over the next four days, our spaces will host world-class keynotes, live competitions, and the kind of meaningful connections that only happen when the right people are brought together in the right place.
