It all comes back to trust.

Trust in the land to do its job.�Trust in the animals and the trees to respond to it.�Trust in the cheesemaker and cidermaker not to fight that, but to honour it.

That’s the thread running through everything.

Working on “Cheddar on My Mind” with Tom Oliver, that idea has always been there—even if we didn’t spell it out. We’re not trying to force an outcome. We’re trying to respond to what’s already happening.

And this year, bringing in Rebecca Holden of the wonderful Hafod Cheddar as guest blender made that even clearer.

Three cheddars from the same farm.

Not manipulated into sameness—allowed to express where they’ve come from.

And it’s the same with the cider. Tom doesn’t grow all the fruit himself, but he works with growers he trusts. People farming in a way that feels aligned. You’re not imposing something on the system—you’re following it.

That’s where “what grows together goes together” actually starts to mean something.

Cheddar doesn’t give you one answer. That’s the point.

Working on “Cheddar on My Mind” with Tom Oliver over the past few years, the one thing that’s held true is that we’ve never made the same cider twice. Different sweetness, different shape, different feel—but they’ve all worked.

Not in spite of the cheese, but because of it.

This fourth iteration builds on that.
Tom and I have blended three versions already, and this year we brought in our friend Rebecca Holden of famed Hafod Cheddar as guest blender.

One farm, one cheesemaker—but three completely different cheddars depending on how the cows are fed, what the weather is doing, what is growing well in the pasture etc etc…

Same place. Totally different outcomes.

It doesn’t simplify things. It makes it more interesting.
So the cider has to respond. Not lock into one idea, but flex. Evolve. Actually do the job across all three.

CHEDDAR ON MY MIND 4

Earlier this year when the weather was wetter and colder, just after Tom finished lambing in fact, Tom and I joined forces again to blend this seasons Cheddar on my Mind.

This time we were joined by Rebecca Holden of Holden Farm Dairy - the home of Hafod Cheddar. One the pioneers of organic dairy here in the UK Rebecca and her husband Patrick have farmed their piece of land between the Cambrian Mountains and the Ceredigion coat as the longest standing organic dairy in Wales.

A key part of their story is the creation of the raw milk Hafod Cheddar, a deliciously complex cheese that tastes of the land and the animal, changing batch by batch it’s a true reflection of the land and the craft of the team who make this great cheese.

So, Tom and I were delighted when Becky agreed to travel to Herefordshire to blend COMM with us, blended for cheddar but this time blended specifically with Hafod in mind.

A celebration of farm, friendship and collaboration.

Great to hang out with Oli, Harriet and Poppy already signing folk up to Christmas cheese orders and selling delicious British cheese.

I was there with my hat on (figuratively- that’s just my red hat in the the photos) and we tasted Burford which is absolutely cracking full of sweet flavour from the June pastures

Christmas is very much in the air - Bristolians get on down to for all your cheese AND cider needs!

CHEDDAR ON MY MIND #4

Tasting notes for today’s pairing….

Barrel Room, Crab Apple Pastures, Welsh hillside, rain, baked apples and earth.

Cheddar on My Mind #4 is going to be different again.

This time and I teamed up with Becky Holden of

Becky is a Farmer and Cheesemaker of total commitment and credibility. Hafod Cheddar is up there, one of my top all time cheeses and on its day possibly number one…

Becky drove across Wales to join us and was kind enough to bring three different batches of Hafod made by and her team;

one from milk fed entirely on outdoor pasture,
one a mix of pasture and Winter ration of hay and silage
and finally one from hay and silage alone.

All three markedly different, all three indisputably Hafod.

We’ve focused in on one maker but it hasn’t made the task of blending more straightforward, rather it has highlighted the incredible variety and complexity to be found in cheese from one maker alone.

Like the infinite fractal nature of a coastline, every time we zoom in, things become more complex.
