Today’s spectacular pastry post comes from Naples Italy. Strawberry šŸ“ cream roll. Made by Pasticceria Santoro Coffee in Napoli. To make this at home you’d make a thin sponge cake layer in a jelly roll pan. Then spread it with vanilla scented whipped cream and sliced strawberries . Roll it up. Place in the fridge to chill for 2 hours. Then cover the outside with more of the whipped cream and top with strawberries or sliced ones. Gently brush with warmed apricot jam or glaze. Not hot. In Italy they use their local ones which are smaller than our average American size. Again. Chill for one hour in the fridge. Will make it easier to slice. Pic from their IG page.

1 frozen puff pastry sheet, thawed⁣
Pastry cream
1 1/2 cups of milk
1/2 cup of sugar
A pinch of salt
1 teaspoon vanilla extract
3 tablespoons of cornstarch

Welcome to September and look at this amazing Italian Pastry. This is a VESUVIO. Also called I DOLCI DI SAN GENNARO. Sept 19 is the feast of San Gennaro the patron saint of thr city of Naples Italy. Pastry shops there create Napoli and San Gennaro themed pastries each year. From the famous Gran CaffĆØ Gambrinus in the center of Napoli they are using their Sfogliatella pastry and forming a sort of volcano shaped cone. Filling it with Italian Pastry cream. Whipped cream. Topped with red crumbs to give the look of an erupting Vesuvio. Red is used also to identify with San Gennaro. I’ll take a double espresso with mine!! Btw. I’ve been to Gambrinus in Napoli and it’s my favorite coffee and pastry house on Earth!! If you get to Napoli it’s not to be missed.
