Maceration is the first stage of making a 120⁰ Pastis ... I use Fennel, licorice (and a few secret ingredients) and a little wormwood before distilling and a second maceration of the Pastis to transform it into our Bittergreen Absinthe, complete with fairy 😋😎

Research trip is going well ... busy checking for ideas in Sicily this week ... I'll be back next week to
Duck Farm Workshops - Dorchester to post orders on Wednesday and we'll be at the Bath and West this weekend too ... Lauren there on Saturday and be gentle if you come to see me Sunday 😊

Looking forward to the festival season about to start in earnest (always happy to hear of any new events too we can come to)

Well Christmas is coming and it’s time to dust off the traders and the festive mood - I’ll be opening this year on Sunday 16th November in Old Ship Inn Upwey

Sunday 17th November and we throw open the doors of Old Ship Inn Upwey for the great tasting event!

12 - 4pm

It’s all about trying what’s on offer this Christmas - the cake, puds, mince pies , sausage rolls, biscotti … the list goes on … enjoy with a complementary glass of mulled juice
Cheese to try or buy from The Book And Bucket Cheese Company and Mere Trout with roulades or pate

Mat Follas will bring Mure Liqueurs including the multi award winning Properly Bitter Lemon (you really should try it)
