When generations of planetary mismanagement resulting in climate change gives you a heatwave, make hot red pepper paste.

Other things that can be dried in direct sunlight for later consumption:

Tomatoes, fruit purées to make fruit leather, grapes, figs

Cover loosely with muslin to prevent birds from picking on or pooping in your reays and remember to bring them in at night if they don’t dry entirely in one day.

***Recipe***
Muhallabiya with toasted pistachios and pingari syrup.

Makes 4 large or 8 small portions

Ingredients for syrup (you could also use a tablespoonful of rose water or orange flower water instead)

Tightly packed cup full of floral botanicals. I used pingari but you could use bay leaves for example
1 cup sugar
1 cup water
1 tsp lime juice to prevent crystallisation

- Bring sugar water and lime juice to the boil
- Once sugar is dissolved, boil till syrup thicken, approx 5 minutes
- Remove from heat and drop in the botanicals.
- Give it a good stir and allow it to steep as long as you like.

Ingredients for muhallabiya

Sliced roasted pistachios- as many as you like
1 litre whole milk
75 gms cornstarch
150gms sugar (add more or less to suit your taste)

- Dissolve the cornstarch in about a cup of cold milk and keep aside
- Heat the rest of the milk and sugar till sugar dissolves
- Then give the cornstarch mix a good stir and pour it into the hot milk while stirring constantly. It will thicken very quickly
- Take the pan off the heat (at this point you can add in the rose water or orange flower water if using) and divide into individual serving bowls
- Allow it to cool for 10/15 minutes, then carefully pour syrup over the top to coats the top of the muhallabiya.
- Scatter over the pistachios and chill.

Muhallabiya with toasted pistachios and pingari syrup.

Tender milk pudding scented with the delicate floral wash of the pingari and warm nutty notes of roasted pistachio.

The pingari flower comes from the Areca tree. The flowers I used came from the bunch in the background, and are from a tree my dad planted in my grandmothers garden.

I was inspired to make it to celebrate hannah Spencer’s win in the Gorton and Denton by-election.

Bit TCI but to me this dessert encapsulated her campaign. Local ingredients/candidate, straightforward recipe/strategy, flavourful, delicate yet strong enough to stand it’s ground and the colours 🤗.

Being part of two world is incredible rewarding, but also carries a weigh hard to discount. Half of me is always with people 5000 miles away.

Being unavoidably so far from home is not easy, specially in difficult times. This victory in G&T helped 💕💕🤗 recipe to follow.

Valeriane brings the Mabinogion to life for me in a way no other media has.

This painting shows Cai and Bedwyr, legendary warriors and devoted friends from the Mabinogion, being guided by the wise old salmon of Llyn Llew on their journey to rescue Mabon from his prison in Gloucester.

Behind the two children rise jagged, unforgiving mountains. Their expressions tinged with fear and uncertainty, they turn instinctively towards one another for support, clinging—almost incongruously—to a laughing, sparkling salmon that leaps purposefully from the water.

For me, this picture is an allegory of hope, courage and the power of friendship. All of which we desperately need in these uncertain times.

We raised £300 for , and my spirit feels lighter than it has in months. The world feels unbearably bleak at times, but it will never ever be as hopeless as it seems because people like you exist in it.

Things are hard for everybody. I know, I had to make the very painful decision to retain half my cost of ingredients this time.

This is why I also didn’t send the menu out privately as I usually do. Apologies, I didn’t know how to explain this before. I wanted to give everyone the choice order or not to, with no pressure whatsoever.

Creamy caramel sweetness with a unique texture created by slow cooked lotus seed, toasted cashews and raisins.

I chose kheer for my Iftar dessert because besides being a common Ramadan sweet, there are as many varieties of kheer as there are people who make this, this version is thickened with slow cooked lotus seed, which gives it its unique texture.

Lakhnawi Veg kebab in the style of seekh kebab

A crisp shell encases a delicate filling of finely minced vegetables, carefully balanced spices, and chickpea flour.

Seekh kebabs come to us from the Mughal Empire — traditionally a spiced minced lamb mixture pressed onto skewers and cooked over fire. Across India today, there are countless regional variations: in Delhi they are spicier, and have more char, while in the refined Awadhi kitchens of Lucknow they are softer and delicately spiced.

Here, I’ve aimed to echo the textures of my favourite tandoori dish while allowing the kebab to stand proudly vegan. Served with one of my mum’s classics — coriander and mint chutney.

The Deglet Nour is prized for its soft, honeyed flavour and its distinctive translucent golden flesh . This quality gives it its name, which means “date of light.”

Breaking the fast with dates has deep religious significance, but it also makes excellent nutritional sense.

The Prophet Mohammed is said to have broken his fast with dates and a sip of water. Beginning with something simple before a larger meal reinforces the spiritual focus, rather than indulgence or excess.

Despite their size, dates are nutritionally dense — rich in potassium (important after dehydration), magnesium, fibre, and small amounts of iron and B vitamins — making them an ideal way to prepare the body for the main meal.
