🍽 Grilled Chicken with Creamy Garlic Sauce & Roasted Veggies

Ingredients
2 chicken breasts (grilled or pan-seared) 🍗
2 medium potatoes (cubed) 🥔
1 cup broccoli florets 🥦
½ cup pineapple chunks 🍍 (optional for sweetness)
1 cup cooked white rice 🍚
1 cup mushrooms (sliced) 🍄
1 tbsp olive oil 🫒
Salt & black pepper to taste 🧂
Fresh parsley (for garnish) 🌿
For the Creamy Garlic Sauce:
1 tbsp butter 🧈
1 clove garlic (minced) 🧄
½ cup heavy cream or milk 🥛
2 tbsp grated Parmesan 🧀
Salt & pepper to taste
Instructions
Roast the veggies:
Toss potatoes, broccoli, and pineapple with olive oil, salt, and pepper. Roast at 200°C (400°F) for 20–25 min until golden and tender.
Grill the chicken:
Season chicken with salt, pepper, and olive oil. Grill for 5–6 min per side until fully cooked and slightly charred.
Make the sauce:
Melt butter in a pan, sauté garlic for 30 seconds, then add cream and Parmesan. Stir until smooth and thickened. Season to taste.
Assemble the plate:
Serve grilled chicken over rice, drizzle with the creamy sauce, and add roasted veggies on the side. Garnish with parsley.
