Restaurant kitchens are high-risk environments where fire hazards are a constant concern. One of the leading causes of fires in foodservice establishments is the spontaneous combustion of oil, grease, food debris, and paper materials that are not properly cleaned at the end of the day. These fires can be devastating, leading to property damage, business disruptions, and even injuries.

𝗛𝗼𝘄 𝗗𝗼 𝗧𝗵𝗲𝘀𝗲 𝗙𝗶𝗿𝗲𝘀 𝗦𝘁𝗮𝗿𝘁?
Fires can ignite in restaurant kitchens due to several common factors:

• Oil and Grease Build-Up – Leftover oil and grease in fryers, hoods, and exhaust ducts can reach high temperatures and ignite.

• Food Debris Accumulation – Small food particles left in fryer oil or on hot surfaces can carbonize and become a fire risk.

• Spontaneous Combustion – Oil-soaked filters left in an enclosed space like filterpans can generate heat and ignite without an external flame.

𝗕𝗲𝘀𝘁 𝗣𝗿𝗮𝗰𝘁𝗶𝗰𝗲𝘀 𝗳𝗼𝗿 𝗙𝗶𝗿𝗲 𝗣𝗿𝗲𝘃𝗲𝗻𝘁𝗶𝗼𝗻
To minimize the risk of fires, restaurant operators should implement the following safety measures:

✔ Daily Cleaning & Maintenance

• Always filter or replace fryer oil and remove food particles at the end of each shift.
• Clean grease traps, exhaust hoods, and ducts regularly to prevent grease accumulation.
• Store used oil and grease in designated containers away from heat sources.

✔ Proper Waste Disposal

• Do not leave oil-soaked rags, filters, or paper towels in enclosed spaces where they can self-ignite.
• Dispose of combustible materials properly in metal, airtight containers.
• Ensure that waste bins are emptied regularly, especially those containing greasy or oily materials.

✔ Safe Equipment Operation

• Turn off fryers and stoves when not in use, especially overnight.
• Maintain proper clearance between cooking appliances and flammable materials.
• Ensure fire suppression systems and extinguishers are functional and easily accessible.

✔ Employee Training & Fire Preparedness

• Train staff on the importance of daily cleaning and fire safety protocols.
• Conduct regular fire drills and ensure employees know how to use fire extinguishers.
• Install and maintain fire suppression systems in high-risk areas, such as fryer stations.

Failure to maintain a clean and safe kitchen can lead to catastrophic fires, insurance claims, legal consequences, and potential business closure. By prioritizing cleanliness and fire safety, restaurant operators can protect their staff, customers, and business operations from preventable disasters.

Always remove oil-soaked filter pads and papers from the built-in filter-system of your fryer or mobile filtration machine, clean them to avoid any risk of overnight combustion.

We’re excited to share the results of a collaborative study between the Dipartimento di Scienze Agrarie, Alimentari e Ambientali at the Università degli Studi di Perugia and FILTROX, evaluating the performance of depth filter media in the filtration of Extra Virgin Olive Oil (EVOO).
The study focused on how FIBRAFIX® AF11 depth filters impact key EVOO quality parameters — including:

🫒 Turbidity
🫒 Antioxidant levels (polyphenols)
🫒 Aroma and flavor retention

Results highlight the excellent performance of FIBRAFIX® AF11 in:
🟡 Reducing turbidity and impurities
🟡 Minimizing oil losses
