Throwback to winter comfort food! ❄️🍷 Our classic beef tenderloin with rich, melty French cheese isn’t just for the colder months—it’s perfect for a special summer dinner or BBQ feast too! 🍖🌞 Who’s ready to bring this delicious recipe to their summer table?

Directions:
1. Season beef tenderloin steaks with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat and sear the steaks on both sides until browned.
3. Reduce the heat and continue cooking until the desired doneness.
4. Remove the steaks from the skillet and let them rest.
5. In the same skillet, deglaze with red wine and beef broth, scraping up any browned bits.
6. Simmer until the sauce is reduced and slightly thickened.
7. Stir in crumbled Bleu D’Auvergne cheese and butter until melted and smooth.
8. Serve the beef tenderloin steaks with the red wine and Bleu D’Auvergne sauce drizzled on top. Enjoy!

Throwback to autumn 🧀🍁—but who says you can’t enjoy these fluffy Comté cheese muffins in summer? Perfect for picnics, brunches, or a quick snack with a gourmet twist. 🌞🍂 Share your muffin-making adventures below or tag a friend who loves cheesy treats!

Ingredients:
2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup unsalted butter, melted
2 large eggs
1 cup milk
1 teaspoon vanilla extract
1 large apple, peeled and diced
100g Comté cheese, grated

Directions:
1. Preheat the oven to 200ºC (400ºF) and grease a muffin tin or line with muffin liners.
2. In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
3. In another bowl, mix the melted butter, eggs, milk, and vanilla extract.
4. Pour the wet ingredients into the dry ingredients and stir until just combined.
5. Gently fold in the diced apple and Comté cheese.
6. Divide the batter evenly among the muffin cups.
7. Bake for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
8. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Throwback to our lovely and refreshing brie and asparagus tart – a perfect choice for a chill, sunny picnic! 🧀

Ingredients:
- 1 sheet of puff pastry
- 1 bunch of asparagus, trimmed
- 150g Brie cheese, sliced
- 2 tbsp olive oil
- Salt and pepper to taste

Instructions:
1/ Preheat the oven to 200°C (400°F).
2/ Roll out the puff pastry on a baking sheet.
3/ Arrange the asparagus spears and Brie slices on top.
4/ Drizzle with olive oil and season with salt and pepper.
5/ Bake for 20-25 minutes until the pastry is golden and the cheese is melted.
