Here’s ’s simple recipe for a delicious twist on traditional Irish soda bread. It’s dead easy with no need to, ahem, knead or prove. Send us a pic if you give it a go!☘️ x

Six seed soda bread
430g plain flour + additional
½ tsp bicarbonate of soda
75g sugar
1½ tsp baking powder
¾ tsp salt
2 tbs (each) sunflower seeds, pepitas, sesame seeds, poppy seeds, flaxseed
1 tsp fennel seeds
400ml buttermilk, + additional
Method
Preheat oven to 150C. Whisk flour, bicarbonate of soda, sugar, baking powder and salt together in a large bowl. Stir in all but 3 tbs of seeds then add buttermilk all at once. Combine until the mixture just clings together – the mixture should not form a smooth dough. Mould
into two round loaves. Scatter tray with half the remaining seeds and set loaves on top. Brush with extra buttermilk, press the impression of a cross into the loaf with the back of a cooks knife and scatter with the remaining seeds. Bake for one hour in preheated oven. Remove and immediately cover with a damp towel to prevent a crust from forming. Enjoy with lashings of butter
