Today, we open the doors to one of the most beloved spaces within Bespoke Residence The Old Mill, Portarlington — a level we affectionately call Minerve, named after the timeless stone village of Minerve, nestled among the quiet mountains of Occitanie.

Like its namesake, this space carries an atmosphere of stillness, inspiration, and gentle beauty — a place where time softens and creativity awakens.

We also call it the Olive Room, for its calming olive and green tones, echoing the surrounding landscape and the enduring spirit of nature. Here, natural stone walls — the very soul of the historic mill — surround the bedroom, just as stone has embraced homes across centuries in the old villages of Europe. These walls hold memory, texture, and quiet strength.

This is where we host our private art classes. Not simply to teach, but to invite:
To slow down.
To create.
To breathe.
To reconnect with the rhythm of your inner world.

And when you pick up a brush here, or lay your hands on a canvas, you feel the creative energy of the mill surrounding you — here, art is not just taught, it is lived.

Origins: Before the Mill

Before the Mill — the land that held stories for thousands of years

Long before The Old Mill was built, this land was already deeply significant.

The Portarlington area was one of the earliest discovered and settled regions on the Bellarine Peninsula. In April 1802, explorer Matthew Flinders shared a meal with local Aboriginal people near this very coastline — a moment of encounter between worlds.

By 1835, John Batman’s land purchase marked the beginning of rapid colonial expansion. Soon after, squatters, surveyors, and settlers arrived, transforming the landscape.

In 1854, this very site was sold at private auction.

Just two years later, something extraordinary would rise here — a structure built not only from stone, but from ambition, industry, and vision.

Today, you can still feel that layered history in the walls.
