SESSION 3: Coeliac Disease – Management and Impacts of Unintended Gluten Presence in Foods

A/Prof. Jason Tye-Din, Lead of Coeliac Research Laboratory in the Immunology Division, WEHI (Walter and Eliza Hall Institute of Medical Research), presented How much gluten is too much? Offering a glimpse into exciting new diagnostic methods that may not be far off!
Dr Sigrid Haas-Lauterbach, Vice president, Food and Feed Analysis Division, R-Biopharm APAC discussed Analytical Challenges in Gluten Management Along the Food Production Chain, highlighting the complexities of detection and the critical need for fit-for-purpose testing along every stage of production.
Dr Kim Faulkner-Hogg, PhD, Adv APD, wonderfully presenting on behalf of Penny Dellsperger, , addressed ‘Clear Labels, Hidden Challenges: Progress and Challenges for Consumers With Coeliac Disease’ highlighted additional consumer burden faced by people with CD from inconsistent labelling to mental health impacts and the high cost of gluten-free living. As unable to attend due to floods, Penny Dellsperger, was congratulated and acknowledged on her 20 year service to Coeliac Australia and support of the broader CD community.
Rachael Miller, Director of People and Food Safety, The Arnott’s Group , presented ‘Arnott’s Gluten Free Tim Tam: Insights and Learnings on the Commercialisation’ sharing the company’s industry-leading commitment to gluten-free manufacturing—and yes, we love the gluten-free Tim Tam as a milestone moment for Coeliac consumer!
The panel closed by reflecting on the future of care, the power of collaboration, and how we can better protect and empower consumers navigating gluten-free diets.
