Good morning Sunday.. 🌼
Australia's winter solstice and the shortest day of the year with just an approximate
9 hours and 50 minutes of daylight. Definitely not enough time to mow..🌞😁
This event happens when the Southern Hemisphere is tilted furthest away from the sun resulting in the least amount of daylight. And in many countries, the seasons of the year are defined by reference to the solstices and the equinoxes.
No matter where or when, Sundays seem to come with a pause button and we hope you have the opportunity to take advantage of it.
Enjoy some serenity - relax & and refuel for the week to come.🥰

Saturday sucks.. hmm said no one ever😁🤣
Weekends are the best - right up there with garlic prawns, cheesy garlic damper and hot chocolate with marshmallows.........🦐🥖😁😋🫶👏
So June is marching on and we're close to the shortest day of the year and it's really noticeable how little daylight there is at the moment. Nature's way apparently, of getting us to do a bit less for a few months.
If you're enjoying a quiet relaxed weekend then cudos to you, if it's housework and shopping then we're in that boat with you!
Whatever whichever, enjoy it 'cause Monday will be back again in no time..😉🥰

How's everyone doing?? 🤔

We're proud and humble at the same time - grateful to those who voted for us, thankful that we have a devoted following and dedicated to maintaining and improving the quality of experience on our beautiful bush property.

We're a long established cattle property now including eco tourism with the beautiful Dalrymple and Banshee Creeks running through our land - and we're fortunate to adjoin the stunning Main Range World Heritage listed national park.

AND back by popular demand!!!!!
Here's the perfect dessert to follow up those camp oven campfire cuisine cook-ups from yesterday's post and it's none other than campfire donuts.. 🍩🍩😁
If you haven't tried them you're missing out folks..🤗

Here's a recipe where the dry ingredients could be mixed together at home and just added to the wet ingredients before cooking.
Why not give it a try next time you're at Gordon Country (and feel free drop some off at the office for us....) please😃

CAMPFIRE DONUTS -
👉Camp oven, perfect - skillet, also perfect.👍

👉You'll need -
1 cup plain flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup sugar
1 egg yolk
1/2 tablespoon butter melted
1/4 cup milk
1/4 teaspoon vanilla extract

3 cups oil for frying or if using a skillet, around 1 1/2 cups (we found coconut oil really good /stable at high heat and adds a subtle flavor)
* Heat your oil to around 180-190 c..
* While the oil is heating - in a small bowl whisk together the egg yolk, sugar, melted butter, and milk and then add this wet mixture to your dry ingredients.
* Fold together until no streaks of flour remain trying not to over mix.
* Roll out the dough on a floured surface with a rolling pin to about 1/2cm thickness. Use a biscuit cutter (around 7cm) to cut out six circles and then use a smaller cutter to cut out the middles.
* Once the oil is hot enough, carefully slide three donuts (or as many will fit without crowding) into the oil and fry for 15 to 20 seconds on the first side, then flip.
* Fry the other side for 15 seconds, or until golden brown, and then remove from the oil.
Pop onto some paper towel to drain excess oil. Repeat with the remaining donuts and dust with icing sugar or roll in a cinnamon/brown sugar combo for extra jujj.. AND yummmmm😋😋

Winter food Wednesday! 😃🥰
Can you see yourself in these pics? At the campsite creating nutritious, delicious food for the family and friends and all in one pot!
Most campers will tell you that Camp Ovens are an integral part of any camping trip and an ideal way to serve up those hot and hearty meals in the cooler months.
Here's a couple of recipes for your next trip that'll have everyone asking for seconds..😋😋

BEEF & VEGGIE STEW
You'll need -
2kg beef, cubed (cheaper cuts are fine for this recipe) cubed
3 tablespoons olive oil
1 large onion, diced
2 carrots chopped
1 red capsicum, chopped
4 cloves garlic minced (or more)
2 cups beef broth
1 teaspoon dried thyme
1 can diced tomatoes
1 dessertspoon Worcestershire sauce
Salt and pepper, to taste
👉 Small amount of at-home prep is good planning -
Cube the beef and marinate overnight in the Worcestershire sauce.
Pre-chop veggies and store them in resealable bags in the refrigerator.

👉Cooking at the campfire -🍲🔥
Get your campfire sorted and wait for it to be a medium heat.
Heat the oil in a large Dutch oven and add the beef, onion, carrots, capsi, garlic, thyme, salt & pepper.
Cook until vegetables are soft and beef is browned.
Add in the beef broth and diced tomatoes, bring to a boil, and then reduce heat and simmer for about an hour.
Serve with some heated crusty bread for a winter camping meal that will really warm your belly and put a smile on everyone's face!🥖😃👏

3 BEAN WINTER CHILLI & BEANS
You'll need -
1 kg lean ground beef
2 tablespoons olive oil
1 large onion, diced
2 cloves garlic, minced (more is better)
1 can red kidney beans
2 tablespoons chili powder
2 teaspoons cumin
Salt & pepper, to taste
4 cups vegetable broth or water
1 can diced tomatoes (400gr)
1 bag elbow macaroni (500gr)
👉Pre done at home-
Chop the onion and garlic and store them in resealable bags in the refrigerator.

👉Cooking at the campfire-🍲🔥
Heat the oil in a large Dutch oven over medium heat and add the onion, garlic, chili powder, cumin and salt and pepper.
Cook for about five minutes until vegetables are softened.
Add ground beef and brown until fully cooked, using a wooden spoon to break up into smaller chunks.
Add beans, broth or water, and diced tomatoes.
Bring to a boil, reduce heat, simmer for about 30 minutes.
Great served with that heated crusty bread for a satisfying full flavour winter camping meal that really does the trick!🥖😋👏
