Developed in collaboration with Gimuy Walubara Yidinji Elder, Professor Henrietta Marrie, Burii is a First Nationsโinspired menu grounded in place.
Meaning โon the fireโ, it reflects family, tradition and a deep connection to Country. Fire is not just a method of cooking, but a place of gathering, where knowledge is shared and community comes together.
Guided by Professor Marrie, Executive Chef David Hart and the Centreโs culinary team explored traditional flavours, seasonal knowledge and cultural practices, shaping a menu true to place and purpose.
Each dish draws on native ingredients and regional produce, reflecting the richness of Tropical North Queensland, Australia.
Burii can be delivered across key conference dining moments, from large-scale three-course dinners to more intimate degustation experiences and canapรฉ-style networking functions.
