Jalisco to Jerez
This new Highwayman whisky batch release is, without a doubt, the most adventurous and daring cask maturation to date! This whisky is firstly matured in a first fill Pedro Ximinez sherry cask before being transferred to a Mexican tequila cask for a second maturation. The name ‘Jalisco to Jerez’ refers to the sherry making region in Spain and the Tequila making region in Mexico, proving that there is nowhere that Dan won’t go to explore and create new flavours! Bottled unfiltered and at a cask strength of 55% this batch yielded 160 bottles and is an exceptional example of a truly unique Highwayman….

Nose -
Honeycomb and roasted walnuts. Antique wooden furniture with hints of sweet agave syrup. Whispers of raisins and dark chocolate intertwined with ancho

Palate -
Thick chewy burnt agave syrup up front developing into sultanas, raisins and stewed prunes. Milk chocolate appearing and melding with the sultanas across the mid palate leading into a sweet mixture of all spice and soft cinnamon finishing with milk chocolate coated raisins.

Finish -
Very long and mouth coating

Production notes
This new release sees the oldest ever Highwayman whiskies married together to create something truly spectacular for a very special bottling! This batch is a colab w Rosellas’s bar in Burleigh heads in the Gold Coast who specialize in Australian products. We wanted to work together to create something truly Australian and super tasty but also incorporate our beautiful blue heeler dogs as well- so Australian Cattle Dog Whisky was born! Unpeated local pale malt was milled, mashed, fermented and double distilled at Lord Byron distillery before being aged in Seppeltsfield Tawny and Apera casks. These casks were married together at a secret ratio to get the perfect flavour balance before being bottled unfiltered and at a cask strength of 55%

Nose
Raisins and stewed prunes. Muscovado sugar and dark vanilla syrup with subtle hints of cloves and Szechuan pepper .
Earthy umaminess with a hint of saltiness.

Palette
Intense sultanas and raisins upfront that splits into dark syrup stewed prunes across the mid palette. Now comes the spice in the form of dark vanilla, cinnamon, nutmeg and cloves. Lashes of sweet golden syrup in abundance towards the back palette.

Finish
Long and sweet with thick oily viscosity

This one’s very close to Dan’s heart - a tribute to an incredible friend & hospitality superhero, Leeroy Petersen.

Dan and Leeroy have talked about this collab for years, and unfortunately Leeroy was taken from us this year, so it would only be right to launch it this Christmas, on Leeroy’s birthday.

To Leeroy, we did it mate.
