🍖 Grilled BBQ Pork Chops with Pepper Sauce & Ugali 🍚

Ingredients:

4 pork chops

2 tbsp olive oil

1 tbsp soy sauce

2 tbsp barbecue sauce

1 tbsp honey

1 tsp paprika

1 tsp garlic powder

Salt and black pepper to taste

For the Pepper Sauce:

3 tomatoes (blended)

1 onion (chopped)

2 cloves garlic (minced)

1 red bell pepper (chopped)

1 tsp chili flakes

1 tbsp vegetable oil

Salt to taste

For the Ugali (maize meal):

2 cups maize flour (cornmeal)

2½ cups water

Pinch of salt

Instructions:

1. Marinate the pork: In a bowl, mix olive oil, soy sauce, BBQ sauce, honey, paprika, garlic powder, salt, and pepper. Coat the pork chops and marinate for at least 30 minutes.

2. Grill or pan-sear: Cook the pork on a grill or skillet for 6–8 minutes per side until caramelized and juicy. Brush with extra BBQ sauce while cooking.

3. Prepare the sauce: In a pan, heat oil, sauté onion and garlic, then add tomatoes, bell pepper, chili flakes, and salt. Cook until thick and rich.

4. Make the Ugali: Boil water with salt. Slowly stir in maize flour while mixing until thick and smooth. Shape and let it rest.

5. Serve: Plate the Ugali with grilled pork chops and drizzle pepper sauce on the side.
