You loved our Rye Barrel Aged Cider, so we did it again.
Introducing Batch #2 of our Rye Barrel Aged Cider. The same 8.7% abv and with a similar flavor profile, the slight differences highlight the natural variations in the ingredients and process.

If Rye Barrel Aged is your thing, we have another one for you. Rye Barrel Aged Imperial Cider was made by taking our Apple Blossom juice blend and boiling it in our brewery kettle to concentrate the sugars. This resulted in a big cider with big flavors of cooked apple, caramel, and cinnamon, with some spiciness and whiskey aromas from the barrel. Clocking in at 15.2% abv, it is a great sipper for chilly winter nights.

So… this is a beer.
Why am I posting a beer on our cider account? The result of what we are calling an “Internal collaboration” between our Head Brewer and our Cidermaker, this beer is made of a 50/50 blend of wort (the sugary grain liquid from which beer is made) and apple juice, called a Graf. As they ferment together, the flavors intermingle and change each other. The result is unlike anything you have ever had… it’s a malty cider, or a cider-y ale.
This being our first one, we went with a low hop, malt-forward recipe for the beer side, and our beloved blend of culinary apples that we use for our Apple Blossom cider for the juice side.
We hope you like it. We sure are excited about it and proud of it, so we have already started on A.I. 2.0, and have plans for many more.

It’s a great weekend for sour lovers at our Farmhouse tasting room!
We’re releasing our first mixed-culture ferment, Funky Apple Tart Cider.
We took our Apple Blossom base and added brewer’s yeast, a different yeast called Brettanomyces, and a lactic acid producing bacteria and let them all work together to create a sour cider that brings the funk.
If it is a little too tart for your taste, ask your bartender for a drizzle of our house-made apple syrup, which is a reduction of the same juice used to make this and many of our other ciders.
In addition to this wonderfully tart cider, our brewer is releasing a sour beer today! The Strawberry Lemonade Sour Ale is like Summer in a glass!
We sure hope to see you this weekend!

Tomorrow.
Rye Barrel Aged Cider.
We aged our Apple Blossom cider and a blend of heritage apple ciders in freshly dumped rye barrels, then blended in some finished Apple Blossom. The result is a big, off-dry cider with plenty of oak, traditional cider tannins, and a hint of rye spiciness.

If green beer isn’t your thing, stop by and have a rye.
