http://whistlersknoll.com/ In August of 2011 Tom (AKA Whistler) and his wife Holly, purchased 13 acres of land in the town of Hortonia with a business plan to become a unique vineyard and winery. But out of nowhere, people began calling t

o ask if they could hold their wedding on our beautiful property. Because of that, we built the wedding pavilion, and ended up booked with weddings from May thorough October those first few years. It takes between 5 and 6 years for a vineyard to mature, and our grapevines were now producing a substantial crop. Fast forward to 2016 and we started the process of applying for a winery permit with the State of Wi. Whistler had been making wine in the basement of his home for over 45 years so he was excited to finally begin making estate wines and opening our tasting room. He had procured equipment from all over the world, and the winery was ready to go. We learned that in the State of WI, once you hold a winery permit, you can not also hold a liquor license (it is illegal to have both.) AND to complicate our wedding bookings even more, we found out wineries must close at 9pm. As we began sharing this information with potential clients, we quickly realized that IF we began making wine, all of our business would go away. Who would book a wedding if their guests couldn't even have an Old Fashioned, and everyone would have to leave at 9 pm? Whistler's dream was crushed. Instead, he decide to change our direction and sell our grapes to other wineries and continue operating as an event venue. From there the floodgates opened and we knew we had made the right decision. Wow...

Our very first night open and we were absolutely blown away!

The parking lot was full. Every chair was taken. The line at the bar stretched all evening. Pizzas flew out of the oven as fast as we could make them.

We were surrounded by an incredible community that showed up, waited patiently, cheered us on, and filled Whistler’s Knoll with energy, laughter, and excitement.

To everyone who came out, ordered a drink, shared a pizza, stood in line with a smile, or simply stopped by to see what we're building here, thank you!

Our hearts are full ❤️

This is only the beginning.

THE SECRET IS OUT ✨🍕🍷

Whistler’s Knoll is officially opening for our soft opening! 🤍

After weeks of building, planting, prepping, late nights, fresh dough making and bringing this dream to life… we’re finally ready to welcome you to the vineyard!

Join us this week for vineyard sunsets, handcrafted cocktails, wine, live music and our homemade wood-fired pizzas 🍕

This is just the beginning and we truly cannot wait to share these summer nights with you.

We’ll have a limited number of pizzas available each evening until sold out.

Another week at Whistler’s Knoll looked like:

• A dump truck full of mulch arrived… we mulched for days 🌿
• Set up our patio spaces for summer nights ✨
• Built Adirondack chairs for the fire pits 🔥(shout out to Whistler 👏)
• Finished the deck around the wood-fired pizza area 🍕
• Planted our edible garnish garden 🌱
• Launched gift cards on the website 🎁
• Finalized cocktail + wine lists 🍷
• Added the second egress to the barn increasing capacity 🤍
• Fired up the pizza oven with some delicious test runs
• Hosted a beautiful wedding filled with love
• Planted the chefs garden as the greenhouse was overflowing
• Worked on training with our incredible team

The to-do list somehow keeps getting longer… but so does the excitement.

We’ve been a little quiet on social lately… but behind the scenes at Whistler’s Knoll, a LOT has been happening 🤍

For the last several weeks, we’ve been working sunrise to sundown almost every day. Building our dream and pouring everything we have into this property. There have been a lot of roadblocks, but little by little, we are getting there!

Here’s a little recap of what we’ve been up to lately:

• Transformed the vintage hay wagon ‘potting shed’ into our new food service ordering window for wood-fired pizzas 🔥
• Finished welding + fresh paint on the pizza oven 🍕
• Greenhouse is FULL of seedlings — tomatoes, cucumbers, herbs, and more vegetables than we can count 🌱
• Planted almost 50 fruit trees; Apple, pear, cherry and peach 🍐🍒🍑🍎
• Endless landscaping, garden work, and bringing the grounds to life
• Renovated the bridal suite, new flooring, paint and vanity stations ✨
• Updated the groom’s room paint, furniture and lighting
• Fresh paint, lighting and decor in the main bathrooms
• New signs built and installed at the entrance
•Concrete poured for next weeks project 👷‍♂️

And somehow, almost every night, we’ve been lucky enough to witness the most beautiful sunsets over the vineyard. Like reminders that we’re exactly where we’re meant to be 🌅

Every day this place feels a little more like home, as the vision comes to life! We can’t wait to share more soon!
