The holiday season is upon us, can you believe 2025 is almost over. Time flies when you are having fun they say. We were blessed not to get hit with any hurricanes this year. We have a lot to be thankful for.

We have to make an announcement we have never had to do before. We have a handful of beef ready to process with processing dates already scheduled for January and February. That’s the good news. We have a lot of new faces on this page. Welcome to our new followers; we are so happy to have you joining us. This is a great time to reintroduce ourselves.

We are Kevin and Sadena Escobar. Together, we are E Bar Cattle Company. Cattle and agriculture production is our passion, the cherry on top and what makes it all worth it is YOU! We love our customers and the relationship we build them. We have a diversified operation that consists of a commercial cow/calf operation, a registered Beefmaster seed stock program, a cattle management program where we manage programs for other producers and our direct to consumer beef program.

Raising cattle amongst these ever changing weather conditions can be challenging. It’s evidence of the sustainable process of growing the food we need to thrive and how cattle a valuable to the ecosystem.

Some people use the word Regenerative. I think of Regenerative Agriculture as “healing the earth from the ground up”. We must be loyal the the land first and foremost.

A few ways we do that is through careful rotational grazing which allows the cattle to take in forage that we can’t consume, turning it into the nutrient rich protein we need in our diets. Cattle grazing allows the forage to grow back stronger and increase tonnage as it absorbs more carbon and the roots grow deeper and stronger allowing for better water absorption and filtration into our aquifers.

Controlled burns or prescribed burns control overgrowth and underbrush and often invasive plants cattle don’t graze to make room for fresh vegetation. This also reintroduces ash and other minerals needed for soil development.

Dragging pastures from time to time breaks up the manure left behind as cattle graze and reintroduces nutrients into the soil. There’s a theme here, can you see what it is? Some of the best advice I ever received was to be a good cow man you must first be a good dirt farmer. The soil is the lifeline and the forage is the vehicle to getting the valuable nutrients, water and carbon to the right places and ultimately completing the circle of sustainability by ending on our plates 🥩.

We are thankful for the rain. At times it may feel like too much and we may be tempted to say no mas but God knows how much we need. Grass grows and soil health improves with rain, sunshine and cattle grazing for a sustainable cycle that improves the environment and the food we need. Let’s get Grass Fed!

There’s a very important question many people have, are cattle really bad for the environment?

The easiest way I have found to explain this is that everything living gives off carbon and has a negative impact one way or another. The question really should be how much good do we do to offset the bad. Agriculture as a whole only produces 9% of all green houses gasses with only 2% being contributed to cattle. On the other hand, agriculture contributes 100% to our food supply.

Cattle being a remanent animal has the ability to digest forages to break down cellulose that protect that forage and extract out to sugars, proteins, and carbohydrates that humans are not able to. This means they are able to take a product that we are not able to eat and convert it into a protein we are able to eat. In addition to producing the most nutrient dense form of protein available for human consumption, the land cattle are raised on play a major impact in water filtration and sequestration, carbon absorption, photosynthesis, wildlife habitat and conservation. Cattle production is a net negative when you weigh all the good against the bad and that’s why we do what we do.

It’s been a full weekend. Yesterday Dayla and I were blessed to be a part of a donation drive with the Pasco County Cattlemen to provide much needed supplies to many people suffering from hurricane Milton and the flooding in our area.

Today we processed calves that we have been behind on. We had some of the best help from a couple top hands in the making. It was a beautiful day with good friends, we are blessed God is Good.

Hurricane Milton packed a punch. We have some flooding, lots of down trees and lost power but we are still standing. We appreciate all your support and we are working hard to get back on track after the last few weeks delays. We have new processing schedule as well so we will have plenty of inventory via preorders. You are why we do what we do. We appreciate you!
