GEN is now offering the next addition to its premium sake list—Hoyo Genji “Shining Prince” Junmai from the Uchigasaki Brewery in Miyagi Prefecture. Falling between a rich Junmai and a Junmai Ginjo, it has notes of citrus, green apple and jasmine. Be sure to try it with their sushi or any of the zensai. Kanpai!

My commute from Brooklyn usually includes a stop at Teruko beneath the Hotel Chelsea. Teruko, named after Japanese artist Teruko Yoko, is a fantastic space with even better food and service. While a bit under the radar for the moment, it is only opinion the top spot for Japanese food in Chelsea. The bar also features probably largest Japanese whiskey collection you will ever see. Chef Ono’s menu has something for everyone and it is all delicious. Be sure to find the bright red noren and venture downstairs for a great experience. Kanpai!

GEN’s beverage menu includes this amazing sake—Nanbu Bijin Tokubetsu Junmai “Southern Beauty” from Iwate Prefecture. It pairs beautifully with, among other things, sashimi and chicken teriyaki. It has aromas of pear and marshmallow and flavors of green apple, pear and hints of savory umami. Enjoy a glass—or many more—to start your Saturday night off right! Kanpai! #日本酒

GEN’s menu will now feature “mini dons”, this one with grilled unagi (eel) atop seasoned rice and togarashi. For a richer experience add a soft onsen egg….
We will be adding more mini dons in the coming days and weeks. Enjoy this mini don with an Asahi Suoer Dry Beer or can of Kikusui Ginjo Nama sake. Kanpai!

I am now working with GEN Restaurant in Brooklyn along my great friend Yasu Suzuki. I have carried this reimagined Tonkatsu recipe and dish from spot to spot and now for a third or fourth time it is again on a menu. Delicious pork loin sits atop Napa cabbage dressed with a yuzu vinaigrette and finished with house made tonkatsu sauce.
GEN is open every day except Monday. Please visit and check it out and enjoy this dish and several other new additions including the new zensai offerings for a delicious way to start your meal. Kanpai!

One of my favorites—the Kuroki Honten “Memory” Sweet Potato (Imo) Shochu. Made with purple sweet potatoes and black koji, it has an amazing flavor with great depth but incredibly smooth. Enjoy some today as Japan takes on the Netherlands at the World Cup—sadly without Liverpool Red Wataru Endo.
