The first beer festival to hit Anderson, Clemson and Seneca will happen on Saturday, September 7, 2013 at the Anderson Recycling Center on Martin Luther King Jr. Featuring upward of 20 breweries including title sponsor Thomas Creek Brewing, the event is the first of many annual beer fests to come to the Electric City.

I don’t know what vermouth you’ve been using, but if it hasn’t been González Byass La Copa and their traditional red sherry vermouth, get with the 19th century recipe and switch up.
Thanks to The Wine Emporium in Salem for introducing me to this bit of awesomocity because I’m hooked. Took 2:1 Redemption Whiskey bourbon to vermouth. Added a couple dashes of bitters and a small splash of cherry syrup. Smoked it in my smoke box on the rocks and...DAYUM!
Paired it with brisket and a helluva evening with the fam. Get to Wine Emporium, buy Redemption (it’s coveted MGP product for a great price) and the La Copa and thank me in the comments.

Last night: ribeyes
Tonight: brisket prep
So, I usually do an elaborate brisket rub for my brisket. This time, just a mix of salt, pepper and dehydrated garlic. Coated this 6.5 pounder after a bit of trimming. Wrapped it for a stay in a cooler on a touch of ice til I smoke it tomorrow. Gonna do my first try at a video tomorrow. Maybe go live just to play around with it (and avoid editing)

So I took some pics on my first idea...ribeye steaks. Simple pairing. Simple method. Simple sides. Ribeye steaks cooked in a cast iron with bacon grease (from Happy Critters Ranch). Did smashed purple potatoes. Charred Brussels. Paired with Buffalo Trace Bourbon.
Cooked it a little longer than I should have
Burned myself once
Rendered the fat perfectly
Seasoned lovely with just salt and pepper

So, the days since the last Carolina BrewHaHa have been interesting to say the least. And while I have not updated in more than 2 years, there really hasn't been much to say. However, if this gets to anyone in Facebook-land, we are looking to start something in the next couple months. It will be something virtual, but something fun (at least to me). I'm going to start up a kind-of pairing series that will bring together beer, bourbon and the preparing and smoking of various foods. I've become a little enamored with using my electric smoker to the point that I think it would be fun to highlight what I like doing and recommendations from others about what they are doing as well. And since smoking things takes time, it's perfect to talk about what to pair with those lags (i.e. bourbon and beer). So, I will keep you updated going forward and hope you like what you see when I produce it. Cheers all!

The weather has passed and it's going to be a beautiful fall day on Saturday. Spend it enjoying some great beers, food, tunes, video games (we have an arcade coming people) and so much more.
