Many years ago, I contributed Mum’s Kuah Lada recipe (Mum suggested this recipe as it is unusual) for an alumni charity cookbook. I thought it was interesting that a Nonya Rempah soup is greenish instead of the usual reddish in colour. Meaning Peppered Soup, Kuah Lada distinctively uses Ikan Pari (Stingray) as the fish of choice and is a very homey, satisfying soup, best accompanied with Sambal Blachan.
