SÉZANNE at Four Seasons Hotel Tokyo

SÉZANNE Tokyo, the Michelin star restaurant offers an impeccable dining experience with classically rooted modern French cuisine led by celebrated chef Daniel Calvert. The interiors are designed by award winning interior designer/architect André Fu from Hong Kong, which injects a contemporary, intimate, and subtle energy into the restaurant.

These 2 sublime dishes « White Asparagus Soup with Shiro Ebi and Piedmont Hazelnut » and « Crème Brûlée Ice Cream » are plated on « Clair de Lune » Collection from LEGLE Porcelain, while « Strawberries from Fukuoka with Burrata Cheese » is plated on « Generic » Collection. The plating art combines Chef Daniel’s cuisine and Legle Porcelain’s design so perfectly, which shows a shimmer light and discret high quality.

這間米其林星餐廳提供著無與倫比的用餐經驗，由名廚 Daniel Calvert 帶領團隊創作出現代和經典兼具的法式料理。室內設計是國際知名獲獎無數的建築師 André Fu 所操刀，為餐廳注入當代、私密怡人且細膩的能量。

« Glutinous Rice Ball in Ginger & Peach Gum Soup from the Hut in Shanghai, China»

The glutinous rice ball is a popular dessert in Chinese dietary cultures, which is commonly consumed in cool and cold seasons.

In this delicate version glutinous rice ball soup from the Hut, ginger and peach gum are added. Peach gum is considered a natural and healthy food ingredient and has a poetic nickname « the tears of peach blossom ».

Blue-and-white wares are produced elsewhere in China, though objects originating from the kilns at Jingdezhen are thought to be the best quality.

“Almond Tofu,” the signature dessert of Mountain and Sea House in Taipei is learnt from the Maître A-Hai. It’s completely handmade and used 100% natural ingredients. The Tofu’s Q texture (springy, soft, and elastic) with a long-lasting of almond makes you easily fall in love with it.
